Its that time of year at Shambles! For those of you that may have been waiting for this day!…. the TRUFFLES have arrived!

Massimo, at Shambles Wine Bar and Restaurant,  met with Dal Tartufaio of Abruzzo Truffles to select some of the finest Truffles, direct from Italy.

Just like Shambles, Abruzzo Truffles is a family business and has been working with truffles since 1994, in the beautiful Sangro Valley which lies in the green Abruzzo region in of Italy. The landscape is characterised by mountains, valleys, rivers and lakes which create the perfect conditions for the natural growth and cultivation of different truffle species.

Sara and Massimo

Abruzzo Truffles is run by cousins Sara Caporale and Rodolfo Di Lucia. They were inspired by Sara’s father who turned his own hobby and passion for the natural world into a successful truffle business. In 2013 as her father’s business began working with restaurants all over Europe, Sara moved to London to supply an increasingly hungry market.

Back in Italy,  highly qualified and experienced truffle hunters use specially trained dogs to find different truffles according to the season, from the delicate summer black to the prestigious winter white truffle. We also plant mychorised oaks and hazels orchards which enable us to collect black truffles on a rolling annual basis.

Shambles currently has there tagliolini with Summer Truffles on the menu!
